Heat Scoville Unit (SHU)

Scale Heat Unit

Skala scoville (Scoville Scale) yaitu ukuran untuk menentukan tingkat kepedasan cabai. Skala ini merupakan ukuran konsentrasi senyawa aktif capsaicin yang menghasilkan rasa pedas bagi manusia. Capsaicin diambil dari genus cabai yaitu Capsicum. Skala scoville ini ditemukan pertama oleh Wilbur L. Scoville (1865-1942) yang dikembangkan menjadi uji organoleptik scoville tahun 1912 ketika bekerja di perusahaan parke davis pharmaceutical. Uji ini berawal dengan melarutkan ekstrak cabai dalam air gula hingga rasa pedas tidak terdeteksi oleh panelis. Tingkat pengenceran tersebut digunakan untuk standar pengukuran skala scoville.
